Norfolk's best Steak
Our special dry-aged Fillet or Sirloin steak is the embodiment of old-fashioned craft butchery. We only use one herd and rotate our cuts through a meticulous 35 day Dry-ageing process.
Not to be confused with Day-ageing, Dry-ageing is a process where a cut of meat is kept at a constant, controlled temperature and humidity which allows moisture to evaporate and the meat to tenderise in a way that you will struggle to find anywhere else.
This prolonged ageing process develops complex flavours, earthy undertones and enhances the mineral vibrancy of the common herbs such as Ribwort Plaintain, Yarrow, Meadowsweet, Wild Mint and Red Clover, blending intense beefy notes with a beautiful, buttery texture.
Served with triple cooked Truffle & Parmesan chips - we don't recommend a sauce as it comes with our own butter sauce and strongly suggest it to be medium cooked, but we're happy to accommodate and accompany with a Diane or Walsingham peppercorn sauce. £28
